One Bowl Easy No-Bake Rocky Road
This is one of my favourite treats and it’s super easy. Its texture is a little bit of a cross between a fudge and a classic crunchy rocky road, which I think is the best of both worlds.
Ingredients:
250g dark cooking chocolate
250g milk cooking chocolate
1 tin (about 400g) of condensed milk
1 tsp vanilla essence
1/3 cup icing sugar
1 1/2 cups soft gummy lollies (such as gummy bears or gummy worms)
1 1/2 cups marshmallows, preferably mini marshmallows
Method:
Line a 20cm x 20cm baking tray with parchment paper.
Chop both the dark and milk cooking chocolates into small, uniform pieces. This will help them melt more evenly.
In a heatproof bowl, combine the chopped dark and milk chocolate.
Pour the condensed milk into the bowl with the chocolate.
Place the bowl over a pot of simmering water (double boiler method), making sure the bottom of the bowl doesn't touch the water. Stir the mixture occasionally until the chocolate is completely melted and smooth, and the condensed milk is well combined. This might take around 5-7 minutes.
Once the chocolate and condensed milk mixture is smooth, remove it from the heat and cool for a couple of minutes.
While the chocolate mixture is cooling, prepare the marshmallows and gummy lollies. If the marshmallows are large, cut them into smaller pieces.
Add the vanilla essence and icing sugar to the chocolate mixture and stir until it's well incorporated. ** you will need to begin to mix quickly at this point and the mixture will begin setting**
Fold in the marshmallows and gummy lollies until they are evenly coated with the chocolate mixture.
Press the mixture onto the prepared baking tray and spread it out into an even layer using a spatula.
Place the tray in the refrigerator for 20 mins, then remove from the fridge and allow to completely set at room temperature for about 2-3 hours.
Use a sharp knife to cut the rocky road into squares or rectangles.

A Note on storage: Store in an airtight container in cool place like your cupboard for 1-2 weeks. If you live in a particularly hot environment you can can store in the fridge, however just know that marshmallows do tend to slowly ‘melt’ / become a little gooey over time in a refrigerated environment.
